“The 7 percent [tyydyttyneitä rasvoja ruokavalion kokonaisenergiamääträstä] is an imaginary number,” admits Alice Lichtenstein, Ph.D. , director of the American Heart Association nutrition committee and a professor at Tufts University. “The idea was to encourage people to reduce their saturated fat intake even further. But the number was pretty much pulled out of the air.” When asked how the committee reconciled the 7 percent recommendation with Krauss’ findings that saturated fat might actually protect against heart disease, Lichtenstein says, “We considered it. I don’t want to talk about it.” '
